Borlotti bean and lemon salad leaves
Ingredients (serves 4)
1 tin of borlotti beans strained and washed
1 small red onion peeled and thinly sliced
Juice of one fresh lemon
Salad leaves, washed
1 dessert spoon of olive oil
Salt and pepper to taste

Simply toss all the ingredients together for a deliciously light salad.

Salad of new potatoes, cherry tomatoes and fresh basil
This salad is an excellent accompaniment to poached salmon fillets.

Ingredients (serves 4)
500g cooked new potatoes (boiled for 10 mins)
350g cherry tomatoes
1 pack of parmesan shavings
fresh basil leaves ripped by hand
1 dessert spoon of balsamic vinegar
1 tablespoon of extra virgin olive oil
Salt and pepper to taste

Halve the potatoes and cherry tomatoes, add all the other ingredients, toss together and serve.
